Spring Lemon Cupcakes
I love Spring and lemon cupcakes seem like the perfect light fresh flavour of the season. Using a pack of cake mix from the last cupcakes I made, I simply added some lemon juice instead of water or milk. The cake itself didn’t seem to to have enough lemon taste to it so I should had added more juice. However, the icing which I just made with icing sugar, butter and cream cheese. Instead of vanilla extract, I used lemon and that did the lemon trick!
I used a different icing tip this time but I wanted to make flowers. It sadly didn’t work well with this tip but I decided to design a basket weave effect. It turned out pretty nice! Next time, I will make flowers and maybe even roses. I also need to find a good icing recipe that isn’t sooo sweet due to all that icing sugar!
